Sometimes I am staged with a Christmas goose to cook. Usually it is plucked and oven ready. A goose may either be arid plucked or dipped in hot water until the water penetrates to the skin. Remove the oil sac from the tail, make sure to remove the lungs, cut the neck off close to the body, wash exhaustively and the bird is ready to cook.

How it is cooked depends on what kind of goose it is. I have cooked both domestic and wild geese. To roast a domestic goose, I stuff it with bread stuffing and place it breast side up on a rack in a shoal roasting pan. I pour 2-cups of boiling water over the goose and cover it. I prick the legs and wings with a fork so the fat will run out. I roast the goose at 325-degrees when it comes to 25-minutes a pound. I uncover it for the last 15-minutes so it will brown.

To roast a wild goose, clean it the same as any bird. I rub the inside of the bird with salt and stuff it loosely with pieces of apple, carrot and onion. I place it breast side up on a rack in a shoal roasting pan. I rub it with oil or lay bacon strips over the bird. I roast it at 350-degrees when it comes to 15-20-minutes per pound. I baste it often times with the pan juices. When it is done I discard the stuffing and serve.

Must be very very very premium, but do the birds know?

When I decided to put up a bird feeder, I bought a bird feeder and this product “Premium Wild Bird Food” from Amazon. The birds went through the bird seed in a couple of days, so I ordered another package. Then I discovered my food store stocks wild bird seed at about half the price of this product. Then I discovered that our local discount store (Costco) sells 40# bags for 12 bucks.

Bottom line, this product is very expensive and my birds just love the seed from the 40# bag.

Seems to satisfy

I’d say the birds and a couple resident squirrels, LOVE THIS FOOD! They all look healthy. They come back everyday and some of them stick around through out the day. A couple of the baby doves actually sit down in the seeds after eating, it’s such a lovely thing to see. The birds fill up on the seeds and leave the grapes I have growing alone…..I hope it works for the apple tree in November.
